Black Glutinous Flour is used to make kuih-muih or substituted for ordinary glutinous rice flour. Black glutinous flour is made from gluten-free black glutinous rice specially grown in the northern and north eastern parts of Thailand. Apart from the chewy texture, it renders unique rice aroma and light purplish color, which enhance both the flavor and appearance of the cuisine.
